  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz mushrooms, sliced
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Microwave sliced mushrooms for 2 to 3 minutes and drain excess liquid.
  3. Lightly brush one side of each tortilla with olive oil and place them on a baking sheet, oiled side down.
  4. On half of each tortilla, layer half the cheese, spinach, softened mushrooms, and the remaining cheese before folding over.
  5. Bake for 6 minutes, flip the quesadillas, then bake for an additional 6-7 minutes until golden and crispy.
  6. Allow to cool slightly before slicing into wedges and serving alongside soft-boiled eggs.
