  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1.5 cups chicken broth
  • 2 cups baby spinach
  • 12 oz egg noodles or pasta of choice, cooked separately
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. Layer the bottom of the slow cooker with chicken, then add onions, garlic, cream cheese, sour cream, chicken broth, Dijon mustard, smoked paprika, garlic powder, salt, and pepper.
  3. Cover and cook on low for 6-7 hours until chicken is tender.
  4. In the last 30 minutes, stir in baby spinach until wilted.
  5. Shred chicken in the sauce using two forks before serving over cooked noodles or pasta.
