  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cup Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Prepare espresso coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Mix until smooth.
  3. Add pumpkin puree and mix well.
  4. Whip cold heavy cream until thickened and fold into the mascarpone mixture.
  5. Dip ladyfingers briefly in coffee and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Repeat layers with remaining ladyfingers and mascarpone mixture.
  8. Chill for at least 4 hours before serving, topped with cocoa powder.
