Creamy Lasagna Soup is a delicious and comforting twist on the classic lasagna, transforming all its beloved flavors into a warm and hearty soup.   • 1 lb ground turkey sausage
  • 1 onion
  • 5 garlic cloves
  • 2 heaping tbsp tomato paste
  • 28 oz canned tomatoes
  • 4 cups beef broth (or chicken broth)
  • 1 cup heavy cream
  • 810 sheets of lasagna noodles
  • Fresh parsley, oregano, and basil
  • Ricotta cheese, mozzarella cheese, and parmesan cheese

Instructions

  1. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, cook the ground turkey sausage until browned; remove from pot.
  3. Sauté onions for a few minutes, then add garlic and red pepper flakes; cook until fragrant.
  4. Stir in tomato paste followed by canned tomatoes; simmer until bubbling.
  5. Pour in beef broth; bring to a boil and season with salt and Italian seasoning as desired.
  6. Break lasagna sheets into the pot and stir occasionally until cooked al dente.
  7. Add heavy cream; mix well before returning cooked turkey sausage and fresh herbs to the pot.
  8. Serve topped with ricotta, mozzarella, parmesan, and additional fresh herbs.
