1/4 cup fresh squeezed lemon juice
1 Tablespoon unsweetened almond milk
1/4 cup loosely packed fresh parsley
3/4 cup olive oil
1 Tablespoon rice vinegar
1 Tablespoon minced shallots
Pinch of salt
4 slices pineapple
1 avocado, sliced
1 corn on the cob
1/2 cup pepitas
1 cup fresh blueberries
1 Tablespoon olive oil
2–3 cups fresh mixed greens
Instructions
Prepare the dressing by combining all dressing ingredients in a mason jar and blending until smooth using an immersion blender.
Preheat your grill to medium-high heat and ensure it's clean.
Brush pineapple slices with olive oil and grill for 2 minutes on each side; grill corn for about 5 minutes on each side until charred.
After grilling, allow corn to cool before cutting off kernels. Assemble salads by layering mixed greens, grilled pineapple slices, corn, pepitas, blueberries, and avocado in bowls.
