  • 150 g granulated sugar (for jam)
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 1/2 teaspoon salt
  • 230 g unsalted butter (softened)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • Powdered sugar (for sprinkling)

Instructions

  1. Prepare the cranberry jam by simmering cranberries, granulated sugar, and water in a saucepan until thickened. Allow to cool.
  2. In a mixing bowl, cream softened butter with sugars until fluffy. Mix in eggs one at a time, followed by vanilla and chopped dried cranberries.
  3. In another bowl, whisk together all-purpose flour, almond flour, and salt; gradually combine with the wet mixture until just blended.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Roll out dough and cut into desired shapes, ensuring some have cut-out centers for the jam to peek through.
  6. Bake cookies for 10-12 minutes until lightly golden. Once cooled, assemble by spreading cranberry jam on solid cookies and topping with cut-out cookies.
