  • 12 oz package of cranberries
  • 1 cup sugar (plus extra for crust)
  • 3/4 cup water
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter (room temperature)
  • 1 egg (beaten)

Instructions

  1. In a pot, combine cranberries, sugar, and water. Cook over medium heat for about 15 minutes until thickened. Let cool.
  2. Combine flour, sugar, baking powder, and salt in a mixing bowl. Cut in butter until crumbly, then mix in the beaten egg.
  3. Preheat oven to 350°F (175°C). Press half the crust mixture into a greased 9×13 inch baking pan. Spread the cooled cranberry filling over the crust and top with remaining crumb mixture.
  4. Bake for about 40 minutes until golden brown. Allow to cool completely before slicing into squares.
