  • 4 boneless, skinless chicken breasts
  • ½ cup cranberry sauce (preferably homemade or low-sugar)
  • 4 oz Brie cheese, cut into small pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. On a cutting board, create a pocket in each chicken breast by slicing horizontally without cutting through.
  3. In a bowl, combine cranberry sauce and Brie cheese; fill each chicken pocket with the mixture.
  4. Rub the outside of the chicken with olive oil and season with salt, pepper, thyme, garlic powder, and onion powder.
  5. Place the stuffed chicken in a baking dish and bake for about 30 minutes or until internal temperature reaches 165°F (74°C).
  6. Allow to rest for a few minutes before serving.
