  • 2.5 lbs beef chuck, cut into large chunks
  • Salt & black pepper to taste
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon chili flakes (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté onion, garlic, and ginger until the onion is translucent.
  2. Season beef chunks with salt and pepper. Add to the pot, browning on all sides.
  3. Stir in red curry paste, ground cumin, cinnamon, turmeric, and optional chili flakes. Cook for another minute until fragrant.
  4. Pour in coconut milk and beef broth; stir well to combine.
  5. Bring to a gentle simmer, reduce heat to low, cover, and cook for about 2-3 hours until the beef is tender.
  6. Stir in brown sugar; adjust seasoning if necessary. Simmer uncovered for an additional 10 minutes.
