  • 1 cup diced onion
  • ¾ cup bread crumbs
  • ⅓ cup broth (or water)
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the lean ground beef, chopped onion, bread crumbs, broth, eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until well combined.
  3. Shape the mixture into a loaf and place on the prepared baking sheet.
  4. Bake uncovered for 40 minutes.
  5. While baking, mix ketchup and white vinegar in a small bowl for the topping.
  6. After 40 minutes, spread the topping over the meatloaf and return it to the oven for an additional 10 minutes or until fully cooked through.
  7. Allow to rest for about 10 minutes before slicing and serving.
