  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted if desired)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two loaf pans or one bundt pan.
  2. In a large bowl, whisk together the vegetable oil (or melted butter), sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, mix the flour, cinnamon, baking powder, baking soda, and salt until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined. Gently fold in the chopped pecans.
  5. Pour the batter into prepared pans and bake for 45-55 minutes for loaves or 55-65 minutes for a bundt cake, checking doneness with a toothpick.
  6. Cool in the pan for 10-15 minutes before transferring to a wire rack.
