  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipping cream (chilled)
  • 6 oz white chocolate
  • 1/4 cup whipping cream
  • pinch of salt
  • fresh raspberries
  • star anise
  • fresh rosemary
  • powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat eggs and sugar until fluffy; add vanilla and vegetable oil.
  3. Fold dry ingredients into the egg mixture until just combined. Spread the batter onto the prepared baking sheet evenly.
  4. Bake for about 10 minutes until golden brown. Let cool slightly before rolling using parchment paper.
  5. For the filling, cook raspberries, sugar, and lemon juice in a saucepan until thickened; cool.
  6. Beat cream cheese until smooth, mix in powdered sugar and vanilla, then fold in whipped cream.
  7. Unroll cooled cake, spread raspberry filling followed by the cream cheese mixture, then re-roll tightly.
  8. Melt white chocolate with whipping cream for topping; drizzle over the cake roll and garnish with fresh raspberries.
