  • 1 cup butter (room temperature)
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla extract; mix until well combined.
  3. Gradually incorporate cocoa powder, salt, baking soda, baking powder, and flour until just mixed.
  4. Roll dough into 1-inch balls and place on a lined baking sheet. Make an indent in each ball with your thumb.
  5. Bake for about 12 minutes. If indents disappear, press down gently after removing from the oven. Let cool on the sheet for two minutes before transferring to a wire rack.
  6. For the fudge filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat while stirring continuously. Mix in mint extract and spoon into cookie indents.
  7. Melt chocolate almond bark and drizzle over cooled cookies. Allow to set completely before serving.
