  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) Dutch-process cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla extract
  • 5 oz chocolate, chopped
  • 1/4 cup + 2 tbsp (90 ml) heavy cream
  • 1/4 cup (85 g) cherry preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sea salt.
  3. In another bowl, beat softened butter until creamy; add sugars gradually and mix well.
  4. Incorporate egg yolks one at a time along with the vanilla until fully blended.
  5. Gradually combine dry ingredients into the wet mixture until just mixed.
  6. Scoop dough onto the prepared baking sheet and create thumbprint indentations.
  7. Bake for about 10 minutes until edges are firm but centers remain soft.
  8. Prepare ganache by heating heavy cream, pouring it over chopped chocolate, and stirring until smooth.
  9. Once cooled, fill each cookie indentation with cherry preserves and top with chocolate ganache.
