  • red bell pepper, sliced
  • carrot, thinly sliced
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried herbs (or Italian seasoning)
  • Salt & pepper, to taste
  • 1 cup uncooked white rice (e.g., basmati or jasmine)
  • 1 cup water
  • Pinch of salt
  • 1 cup broccoli florets
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water until clear. Combine it in a pot with 1 cup water and a pinch of salt. Bring to a boil, then cover and simmer on low for 12-15 minutes.
  2. Heat olive oil in a non-stick frying pan over medium-high heat. Cook chicken strips for 5-6 minutes until golden brown.
  3. Add sliced carrots, bell pepper, garlic powder, dried herbs, salt, and pepper to the pan. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
  4. Steam broccoli florets in a steamer basket over boiling water for about 4-5 minutes.
  5. Serve the chicken stir-fry alongside fluffy rice and steamed broccoli.
