Ingredients

  • Bone-in skinless chicken thighs
  • Cold water
  • Olive oil
  • Yellow onions
  • Carrots
  • Celery
  • Garlic
  • Salt
  • Pepper
  • Lemon juice
  • Bay leaves
  • Fresh parsley

Instructions

  1. In a large stockpot, combine chicken thighs and 3 quarts of cold water. Bring to a boil, cover, reduce heat, and simmer for 30-45 minutes.
  2. Meanwhile, heat olive oil in a separate pot over medium heat. Sauté diced onions until translucent (4-5 minutes). Add chopped carrots and celery; cook for another 10-15 minutes. Stir in minced garlic, salt, and pepper in the last 2 minutes.
  3. Strain the broth into the pot with vegetables after removing chicken from the stockpot.
  4. Shred cooled chicken into bite-sized pieces and return to the pot with lemon juice and bay leaves.
  5. Bring to a boil again before reducing heat to low; simmer for 30 minutes until vegetables are tender.
  6. Taste and adjust seasoning if needed before serving hot.
