  • 1 lb boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and season chicken pieces with salt and pepper. Sauté until golden brown (5–7 minutes) and then set aside.
  3. In the same skillet, add sliced mushrooms and sauté until golden (4–5 minutes). Stir in minced garlic and cook for an additional minute.
  4. Add chicken broth and Marsala apple vinegar; let simmer for 3–4 minutes.
  5. Reduce heat; stir in heavy cream, Parmesan cheese, and thyme. Return chicken to skillet and mix until heated through. Toss in cooked pasta until well coated in sauce.
