  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup whole milk

Instructions

  1. In a large heavy-bottomed pot, melt the butter over medium-high heat. Add the onion, carrots, and celery; cook for about 5 minutes until softened. Stir in garlic and cook for another minute.
  2. Add flour to the vegetables, stirring well to combine, then cook for one minute. Gradually add the evaporated milk and chicken stock while stirring continuously to avoid lumps.
  3. If using raw chicken, add an extra cup of broth with chicken pieces; simmer for about 20 minutes until cooked through. Shred the chicken before returning it to the pot.
  4. For pre-cooked chicken, bring the mixture to a boil before adding the shredded chicken along with thyme and spices.
  5. In a mixing bowl, combine flour, baking powder, salt, pepper, and thyme for the dumplings. Stir in whole milk and melted butter until just combined.
  6. Drop spoonfuls of dumpling batter into simmering broth, cover with a lid, and let them cook for about 15 minutes without lifting the lid.
