  • 1 cup shredded sharp cheddar cheese
  • 12 diced jalapeños (seeds removed for less heat)
  • 2 tbsp ranch seasoning
  • 1/4 cup softened cream cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • Salt & black pepper, to taste
  • 1 cup flour
  • 2 eggs, beaten
  • 1.5 cups breadcrumbs or panko
  • Neutral oil for frying
  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1 tbsp ranch dressing or seasoning
  • 1/2 tsp garlic powder
  • 1 tsp lemon juice or white vinegar
  • 1 tbsp chopped parsley
  • Red pepper flakes, to taste

Instructions

  1. In a mixing bowl, combine shredded chicken, cheddar cheese, jalapeños, ranch seasoning, cream cheese, garlic powder, smoked paprika (if using), salt, and pepper. Mix well.
  2. Form the mixture into bite-sized balls and chill in the refrigerator for 15–20 minutes.
  3. Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
  4. Coat each popper in flour, dip in eggs, then roll in breadcrumbs. For added crunch, double-coat them.
  5. Heat oil in a frying pan to 350°F (175°C) and fry the poppers for about 3–4 minutes per side until golden brown.
  6. Drain on paper towels or wire racks and serve hot with the creamy dip.
