  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 2 large eggs
  • ¼ cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, heat olive oil. Sauté the chopped onion until soft (about 5 minutes). Add minced garlic and cook for another minute. Gradually add spinach in batches until wilted; drain excess liquid.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, seasonings, and beaten eggs until well mixed.
  4. Fold in the cooked spinach mixture and transfer to the baking dish. Sprinkle breadcrumbs on top.
  5. Bake for 25–30 minutes until golden brown and bubbly. Let cool before serving.
