  • 3 shallots, finely diced
  • 1 carrot, finely diced
  • 2 small stalks of celery, finely diced
  • 3 cloves of garlic, crushed
  • 400g extra lean beef mince (ground beef)
  • 400g chopped tomatoes, canned
  • 3 tablespoons tomato paste
  • 240ml chicken stock
  • 500g gnocchi
  • 120g mature cheddar, grated

  1. In a frying pan over medium-high heat, spray olive oil and sauté shallots, carrot, and celery until softened.
  2. Add garlic and ground beef; cook until browned.
  3. Stir in chopped tomatoes, tomato paste, and chicken stock; bring to a boil. Simmer for 20 minutes.
  4. Add gnocchi to the sauce; simmer for an additional 5–8 minutes until cooked through.
  5. Transfer to a baking dish, top with cheddar cheese, and broil for about 4 minutes until melted and golden.
  6. Garnish with fresh basil before serving warm.
