  • 1 lb. box of Ziti Pasta
  • 1.5 cups of Mayonnaise
  • 1/4 cup of Sour Cream
  • 2 teaspoons of White Sugar
  • 1 Red Bell Pepper
  • 1 medium sized Red Onion
  • 1 large Carrot
  • 2 stems of Celery
  • 2 tablespoons of diced Pimientos with the liquid
  • 1 bunch of fresh Parsley (optional)
  • 2 teaspoons of Celery Salt (or to taste)
  • 2 teaspoons of Celery Seed (or to taste)
  • 1 lb. block of your favorite Cheddar Cheese

Instructions

  1. Cook 1 lb. of ziti pasta according to package directions until al dente. Rinse with cold water and drain.
  2. In a large bowl, finely dice 1 red bell pepper, 1 medium red onion, and 2 stems of celery. Add to the bowl along with 2 tablespoons of diced pimientos.
  3. Grate 1 large carrot and add it to the vegetable mixture.
  4. In a separate bowl, whisk together 1.5 cups of mayonnaise, 1/4 cup of sour cream, and 2 teaspoons of white sugar.
  5. Toss the vegetable mixture with the dressing until well coated. Allow it to sit for 15 minutes.
  6. Combine the dressed vegetables with the cooled pasta and gently fold in diced cheddar cheese.
  7. Cover and refrigerate for at least 4-6 hours before serving.
