- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 tsp vanilla extract
- Extra 1/2 cup shredded coconut for coating
- Blend all ingredients in a food processor until well combined into a sticky dough.
- Scoop out portions of dough and roll into small balls (about 1 inch in diameter).
- Roll each ball in extra shredded coconut to coat evenly.
