  • 3 envelopes unflavored, powdered vegan gelatin (about 7 ½ teaspoons)
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • 1 teaspoon peppermint extract
  • ¼ teaspoon kosher salt
  • 12 teaspoons red food coloring
  • ⅓ cup powdered sugar or cornstarch (for rolling)

Instructions

  1. 1. Grease a 9×9-inch baking pan.
  2. 2. In a stand mixer bowl, bloom the vegan gelatin with ⅔ cup cold water.
  3. 3. In a saucepan over medium-high heat, mix sugar, corn syrup, and remaining water until boiling; bring to 240°F.
  4. 4. Slowly pour the hot sugar mixture into the bloomed gelatin while mixing at low speed; add peppermint extract and salt.
  5. 5. Increase speed to high and whip until stiff peaks form (10-12 minutes).
  6. 6. Pour into the prepared pan and swirl in red food coloring.
  7. 7. Let sit at room temperature for at least 4 hours or refrigerate for about 2 hours.
  8. 8. Dust with powdered sugar/cornstarch before cutting into pieces.
