  • 3 lbs red potatoes
  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c mayonnaise
  • 1/3 c sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Boil the potatoes in salted water for 12–15 minutes until fork-tender. Drain and let cool.
  2. In a bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, and seasonings.
  3. In a large mixing bowl, combine cooled potatoes with chopped eggs, celery, and green onions.
  4. Toss with about two-thirds of the dressing until well coated. Chill for at least 30 minutes before serving.
  5. Just before serving, add remaining dressing and garnish with parsley.
