  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz. button mushrooms
  • 2 Tbsp butter (or plant-based alternative)
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • Fresh thyme leaves
  • Jarred pesto sauce

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and yeast. Add olive oil and squid ink.
  2. Gradually mix in warm water until dough forms; knead for about 5-7 minutes until smooth.
  3. Cover the dough and let rise in a warm area for 30 minutes.
  4. Prepare mushroom skulls by slicing mushrooms and sautéing them with butter, shallots, garlic, apple juice, and thyme.
  5. Roll out risen dough into ovals about ½ inch thick. Spread pesto on each flatbread and top with sautéed mushrooms.
  6. Bake in a preheated oven at appropriate temperature for about 15-20 minutes until golden brown.
