  • 230 g Caster Sugar
  • 10 g Blood Orange Zest
  • 170 g Whole Eggs
  • 115 g Heavy Cream
  • 185 g Cake Flour
  • 3 g Baking Powder
  • 60 g Neutral Oil (Vegetable or Groundnut)
  • 50 g Blood Orange Juice
  • 50 g Sugar (for syrup)
  • 100 g Icing/Powdered Sugar
  • Lemon Juice
  • Blood Orange Juice (for syrup)
  • 3 g Powdered Vegan Gelatin (optional)
  • 18 g Cold Water (for gelatin)
  • 100 g Whole Milk (for cream)
  • 135 g Dark Chocolate, Melted (for cream)
  • 10 g Glucose (for cream)
  • 200 g Heavy Cream (for cream)

Instructions

  1. Preheat oven to 160C/320F and grease a 2lb loaf tin.
  2. Mix caster sugar with blood orange zest in a bowl for one minute.
  3. Add whole eggs and whisk using a stand mixer for three minutes until thickened.
  4. Stir in heavy cream until combined.
  5. Sift in cake flour, baking powder, and salt; gently fold together.
  6. Mix in neutral oil until smooth, then pour into the prepared loaf tin.
  7. Bake for 65-75 minutes or until a skewer comes out clean.
  8. While baking, prepare the soaking syrup by dissolving sugar in water.
  9. Once baked, soak the cake with syrup, cool, then wrap tightly and refrigerate overnight.
