  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chiles
  • 3 arbol chiles
  • 2 Roma tomatoes
  • 1 white onion
  • 6 garlic cloves
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • Corn tortillas or cassava flour tortillas
  • Oaxacan cheese

Instructions

  1. Remove stems and seeds from chiles; toast them in a dry skillet over medium heat until fragrant (1–2 minutes).
  2. Blend toasted chiles with Roma tomatoes, onion, unpeeled garlic, vinegar, salt, pepper, cumin, oregano, cloves, cinnamon, ginger, and beef broth until smooth.
  3. In a Dutch oven over medium-high heat, brown the beef chunks; pour blended sauce over them and add bay leaves. Bring to a boil then reduce heat and simmer covered for about 8 hours until tender.
  4. Shred cooked beef using forks. Dip corn tortillas into reserved consommé then fry in a skillet until crispy.
  5. Assemble tacos by filling tortillas with shredded beef, diced onion, chopped cilantro, and Oaxacan cheese before folding.
  6. Serve warm with a bowl of consommé on the side for dipping.
