  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • ½ pound ground beef (optional)
  • 2 tablespoons tomato paste
  • 6 cups chicken broth
  • ½ cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened (5–7 minutes).
  3. Add garlic, oregano, basil, and red pepper flakes; cook for 1 minute.
  4. If using beef, add it now and brown until fully cooked; drain excess grease.
  5. Stir in tomato paste and cook for another minute.
  6. Pour in chicken broth and bring to a boil.
  7. Add kidney beans and cannellini beans; simmer on low for at least 30 minutes.
  8. Cook ditalini pasta separately according to package instructions; add before serving.
  9. Season with salt and pepper as needed.
