  • 3 pounds Russet potatoes
  • 4 ounces provolone cheese (cubed)
  • 4 ounces sharp cheddar cheese (cut into small cubes)
  • 6 slices turkey bacon (cooked and crumbled)
  • 1 cup Panko breadcrumbs
  • 3 large eggs (lightly beaten)
  • ¼ cup freshly chopped parsley
  • ½ teaspoon garlic powder
  • 2 tablespoons whole milk
  • ½ teaspoon sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper (or to taste)
  • Vegetable oil (for deep frying)

Instructions

  1. Boil cubed Russet potatoes in salted water until fork-tender (about 20 minutes). Drain and mash until smooth.
  2. In a mixing bowl, combine mashed potatoes, provolone and cheddar cheeses, crumbled turkey bacon, parsley, garlic powder, milk, salt, pepper, and beaten eggs.
  3. Shape the mixture into small balls or cylinders. Roll in flour, dip in beaten egg, then coat with Panko breadcrumbs.
  4. Heat vegetable oil in a frying pan over medium heat. Fry croquettes until golden brown on all sides (about 4–5 minutes per side). Drain on paper towels.
  5. Serve warm with your choice of dipping sauce.
