  • 2 cans kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Instructions

  1. Sauté diced green peppers and onions in a Dutch oven over medium heat until translucent (about 5 minutes).
  2. Stir in spices (except baking soda) and cook for another minute.
  3. Add ground meat and brown until slightly pink.
  4. Pour in tomato sauce, diced tomatoes, water, and tomato paste; stir to combine.
  5. Simmer for about 15 minutes before adding kidney beans.
  6. If using baking soda, mix it in now and stir until bubbling settles down.
  7. Serve hot with desired toppings.
