  • 4 egg yolks
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cup heavy cream
  • 3036 ladyfingers
  • 1 1/2 cup strong black coffee (room temperature)
  • 2 tbsp cocoa powder

Instructions

  1. In a mixing bowl, whisk together egg yolks and sugar until smooth. Add vanilla and salt; mix well.
  2. Fold in cold mascarpone cheese until combined.
  3. In another bowl, whip chilled heavy cream until stiff peaks form, then fold into the mascarpone mixture.
  4. Brew strong black coffee and let it cool; optionally add fruit juice or vinegar.
  5. Dip ladyfingers quickly into the coffee mixture and layer half in a dish followed by half of the mascarpone cream. Repeat with remaining ingredients.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
