  • 3 ½4 lb beef shoulder
  • ½ lb turkey bacon
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard

Instructions

  1. Trim excess fat from the beef shoulder, cut it into 2-inch chunks, and pat dry.
  2. Dice the onion and mince the garlic. Cut turkey bacon into strips.
  3. Heat a large braiser over medium-high heat with olive oil. Brown the beef in batches until golden on all sides.
  4. Add turkey bacon to the braiser and sauté until crispy; remove with a slotted spoon.
  5. Sauté onions for about four minutes, then add garlic and cook for one minute more.
  6. Deglaze the pan with apple juice; stir in mustards and thyme, then return browned beef to the pot along with chicken broth.
  7. Bring to a boil, cover, and simmer gently for one hour.
  8. Add prunes and turkey bacon; after fifteen minutes, add sliced apples and cook until tender.
  9. Thicken with a cornstarch slurry if desired before serving.
