  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup beef broth

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, grating the ginger, and cutting the beef into chunks.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides; remove and set aside.
  3. In the same pot, sauté onion, garlic, and ginger until softened. Add red curry paste, cumin, coriander, turmeric, cinnamon, and cayenne pepper; cook for an additional minute.
  4. Return the beef to the pot and stir in coconut milk and beef broth.
  5. Bring to a gentle simmer. Cover and reduce heat to low; let it cook for about 1.5 to 2 hours until tender.
  6. Taste and adjust seasoning before serving hot over rice or with naan.
