  • 1 pound beef stew meat
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 carrots (chopped into ½-inch pieces)
  • 8 ounces cremini mushrooms (sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 6 cups low sodium beef broth (or low sodium chicken broth, plus more as needed)
  • 2 bay leaves
  • ¾ cup pearl barley (rinsed)
  • Chopped fresh parsley (for serving)

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Brown the beef on all sides; remove and set aside.
  2. In the same pot, sauté onions, celery, carrots, and mushrooms until softened.
  3. Stir in garlic, thyme, and tomato paste; cook until fragrant.
  4. Return the beef to the pot along with broth and bay leaves; stir well.
  5. Bring to a simmer, cover, and let cook for 45 minutes.
  6. Add rinsed barley; cover again and simmer for another 45–60 minutes until tender.
  7. Adjust seasoning as needed and serve hot with fresh parsley.
