  • ⅓ cup olive oil
  • Salt & pepper to taste
  • 2 cloves of garlic
  • 12 chillies
  • 1 lemon – juice and zest
  • 8 large prawns (prepared with shells still on but vein removed)
  • 1 Tbsp / 2g fresh parsley
  • Fresh lemon wedges for serving
  • Fresh crusty bread of your choice for dipping in the sauce

Instructions

  1. Prepare the BBQ grill by lighting firelighters and adding charcoal until they are white hot.
  2. In a pan, heat olive oil and sauté grated garlic and sliced chillies for about 2 minutes. Add lemon juice and zest, cooking gently until fragrant.
  3. Marinate cleaned prawns by rubbing half of the garlic mixture under their shells to infuse flavor.
  4. Grill prawns on high heat for 45 seconds to 1 minute per side until pink and charred.
  5. Serve immediately drizzled with remaining sauce and accompanied by lemon wedges and crusty bread.
