  • 12 lbs salmon fillets
  • 68 tablespoons butter
  • 12 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • Fresh herbs (parsley or basil)
  • Salt and pepper

Instructions
