  • 1 pound chicken sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken sausage and cook until browned, about 5–7 minutes. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until tender (about 5 minutes). Add garlic and Italian seasoning; cook for 1 minute.
  3. Pour in chicken broth and diced tomatoes; return sausage to the pot. Bring to a boil, then reduce heat to simmer for 20 minutes.
  4. Add tortellini and cook according to package instructions (7–9 minutes).
  5. Stir in spinach until wilted (1–2 minutes). Season with salt and pepper before serving.
