Ingredients

Scale
  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef broth
  • Fresh rosemary, thyme, and bay leaves

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season lamb shanks with salt and pepper and brown on all sides (5-7 minutes). Remove from pot.
  2. In the same pot, sauté onion, garlic, carrots, and celery until softened (about 5 minutes). Stir in tomato paste and cook for an additional minute.
  3. Pour in apple vinegar and beef broth; scrape up any browned bits. Add herbs (rosemary, thyme, bay leaves).
  4. Return lamb shanks to the pot. Bring to a simmer, cover with a lid, reduce heat to low, and braise for 2-3 hours until tender.
  5. Serve lamb shanks with gravy over your choice of sides.
