  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 whole onion (diced)
  • 1 cup carrots (cubed small)
  • 1 tbsp tomato paste
  • 1 tbsp thyme (dried or fresh)
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef with salt and pepper; let it sit at room temperature for 30 minutes.
  3. Heat olive oil in a Dutch oven over medium-high heat, brown the beef on all sides for about 10 minutes, then transfer to a plate.
  4. In the same pot, sauté diced onions and cubed carrots until softened (about 5 minutes). Stir in tomato paste.
  5. Add red apple vinegar and beef broth; simmer for a couple of minutes.
  6. Return the beef to the pot, add bay leaves and thyme, cover, and cook in the oven for 2½ to 3 hours until tender.
