  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 325°F (163°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and cinnamon; combine with melted butter. Press into liners and refrigerate.
  3. Prepare streusel by mixing flour, brown sugar, oats, and spices; add melted butter until crumbly. Refrigerate.
  4. Beat cream cheese and sugar until smooth; add vanilla, flour, and egg, mixing just until combined.
  5. Spoon cheesecake filling into crusts; top with apple mixture coated in lemon juice and spices.
  6. Add streusel topping over each cheesecake.
  7. Bake for 28–30 minutes until edges set but centers remain jiggly. Cool before refrigerating.
