  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes thoroughly and cut larger ones into halves or quarters.
  2. Place in a large pot, cover with cold water, and add salt.
  3. Bring to a boil over high heat, then reduce to a simmer until tender (15-20 minutes).
  4. Drain and let cool slightly.
  5. In a bowl, whisk together olive oil, lemon juice, apple vinegar, Dijon mustard, garlic, salt, and pepper.
  6. In a large mixing bowl, combine cooled potatoes with olives, feta cheese, parsley, and dill.
  7. Pour dressing over the mixture and toss gently until coated.
