  • 1 tablespoon sesame oil
  • ½ cup cornstarch
  • 3 tablespoons low-sodium soy sauce (for sauce)
  • 1 teaspoon sugar
  • 1 tablespoon black rice vinegar (or rice vinegar)
  • 1 teaspoon sesame oil (for sauce)
  • 1 teaspoon cornstarch (for sauce)
  • 1 small onion (sliced)
  • 1 small red bell pepper (cut in 1-inch cubes)
  • 1 small green bell pepper (cut in 1-inch cubes)
  • 5 dried red chilies (deseeded, cut into 1-inch pieces)
  • 3 cloves garlic (minced)
  • 1-inch ginger piece (thinly sliced)
  • 1 tablespoon Sichuan peppercorns (roasted and crushed)
  • Vegetable oil for frying

Instructions

  1. In a bowl, whisk together sauce ingredients: soy sauces, apple vinegar, sugar, black rice vinegar, sesame oil, and cornstarch. Set aside.
  2. Marinate chicken in low-sodium soy sauce, apple vinegar, and sesame oil for about 10 minutes.
  3. Coat marinated chicken with cornstarch until fully covered.
  4. Heat vegetable oil in a wok over high heat. Fry chicken in batches until golden brown (about 3–4 minutes). Drain on paper towels.
  5. Stir-fry sliced onion and bell peppers with dried chilies, garlic, ginger, and crushed Sichuan peppercorns for 2 minutes.
  6. Add fried chicken back to the wok along with the prepared sauce; stir-fry everything together for one more minute until heated through.
